Korean Seaweed Soup (Miyuk Gook)

Also called Birthday Soup, this dish is known to have many heath benefits. 
It can be eaten as it is or served with Rice as part of a meal.
Traditionally it is served on Birthdays. Miyuk Gook is full of Iron, Vitamin A, B, C and Calcium.



Ingredients:
(serves 4 @ 3 WW Points per bowl)

25g dried Seaweed
800ml light Chicken Stock (preferably homemade)
2 Garlic Cloves, minced
3 dried Chinese Mushrooms, soaked and sliced
130g Lean Beef, sliced thinly
100g firm Tofu, cut into cubes
1tbs Soy Sauce
1tsp Sesame Oil
a pinch of Sea Salt



Soak the Seaweed in Water for 30 minutes, then cut into 1 inch length pieces.
Pour the stock into a saucepan, add all the ingredients apart from the Tofu and bring to a simmer.
Cook on a low heat for 20 minutes, then add the Tofu and continue to cook for a minute or two until heated through and it's done. I have made this soup loads lately, It is just so tasty and filling too and has hardly  and calories yet so much goodness. If you haven't had this before, please try it!
